Carrot Loaf Recipe

- 1 cup White flour
- 1 cup Whole wheat flour
- 2 tablespoons cornstarch
- 1 cup brown sugar
- ½ cup white sugar
- 1 teaspoon baking powder
- 1 ½ teaspoon cinnamon
- 1 teaspoon baking soda
- 3 eggs
- 1/3 cup oil
- 2/3 cup buttermilk
- 1 ½ cup grated carrot
Cooking instructions:
- Preheat oven to 165°C
- First, separate the eggs and beat the whites to a peak.
- After it has reached a stiff peak, gradually add the white sugar to the beaten egg whites.
- Next, in a separate bowl, mix the dry ingredients and add everything except the egg whites and carrots.
- Once it is mixed, gently fold in the egg whites and then the carrots.
- Bake it for 30 – 35 minutes.
